In a nut shell, for the iphone 5 and the ipad 4 you mentioned... Note the numbers after the name. These amazing pieces of hardware were first invented years ago, and these are rereleases of basically the same ground breaking technology with some more bells and whistles. The iphone was invented 5 years ago, and the ipad was invented april of 2010. Apple will be fine as its ecosystem will be the wide moat of protection from competing products, but eventually Apple will need a new earth shattering product to keep it on the throne of leading innovator. Moreover though, a new product will get investors excited again- something I am anxoius for as a shareholder.
I hope this helps summarize the article above for you if it was too long :-)

"On their own, as devices, they are great, but what makes them superior and durable is the ecosystem, which I think you may be understating. "
Not really. I stated that even IF Apple stopped there excellent trend of innovating for some time, the ecosystem will still ensure a reasonable rate of growth for the time being. I do think though that a new product line like a new apple tv for example would heighten Apple excitement. I feel a new product line is due!
"but I think the more important fundamentals to focus on is revenue and profit growth, margins and the cash cycle. As long as Apple continues to produce growth, maintain healthy margins, and create a ton of free cash flow, then the frequency of new products is not really all that important."
If Apple releases a fresh product they will most likely experience much better growth than not. New products usually ensure the important fundamentals you mentioned... In my opinion, the new products developed mean everything to this company and the ecosystem alike.
