If you check the FDIC website and use the EDIE calculator it's easy to find ways to structure multiple accounts at the same institution and still be fully insured. For instance, a couple with 1 minor child could insure over 800k very easily. ANYONE exceeding FDIC limits at ANY bank right now is at risk, but make sure you know what your limits really are!
