Your description of Buffalo Wild Wings as a "New York regional fried chicken diner" is odd. It was founded in Ohio, and now has over 400 sports bar restaurants in 37 states. There are even 2 here in Lubbock, TX. The menu is varied, way more than wings. You might try eating there sometime, or check out their description on Wikipedia, at least.
